Calming Jubilee Calming Jubilee

(Everyone takes a break at the end of the project. Sweets that make you feel calm.)

(Ingredients: about 3 servings)
100ml water, 40g granulated sugar, 5ml lemon juice, 5ml grapefruit juice, 5g sheet gelatin, (3ml elderflower syrup if available), 1/2 pink crepefruit, 1 orange, 1 kiwifruit, spearmint

preparation
● Cut the fruit
(remove all the skin and cut the flesh into 2cm cubes)
● Reserve the juice that comes out when cutting the pink crepe fruit (to be used for the jelly later)
● Squeeze lemon juice
● Reconstitute the sheet gelatin in cold water (cold water is not listed).

how to make
① Put water and granulated sugar in a pan and heat to dissolve. When melted, add pink grapefruit juice and lemon juice.
② Melt the gelatin into ① and mix it, filter it into a bowl with a tea strainer, and cool it in the refrigerator to harden it.

finish
③ Take out the jelly from ② onto a cutting board and cut it finely with a knife (you can break it up with a fork, but a knife will make it sparkle more)
④ Stack the fruit and the jelly from ③ in a glass and serve. Garnish with mint on top.
⑤ Slowly pour Leafflow into ④ until it becomes a flutter. (If you add too much, it will float, so be careful!)
